So the caramel came out awesome. Now like the fudge I just need to cut it up and package it. Today though is Chocolate Truffle day. I made chocolate truffles back in middle school for french class. They are pretty easy to make if i remember correctly. Mostly cream and Dark chocolate I found a great Instructable Called Anatomy of a Chocolate Truffle that goes through the basics and even teaches you how to make flavored truffles. I am trying my hand at Cab Sav truffles today and have port truffles and honey whiskey truffles in the works for the rest of the week. I also saw a recipe for rosemary and sea salt ones that I really want to try.
What other interesting truffle flavors should I try?
In the process of designing some boot toppers so I can wear my tights and dresses and keep my legs warm.

Chocolate
Last night Antea and I found ourselves at a chocolate bar and desert lounge in Bella Vista. We were on the look out for gelato and found it at Golosa. We were sat at a small table and handed menus that had tasty treats like hot chococlate (real hot chocolate, the thick melted 70% chocolate kind), red velevet cake, and of course gelato. Antea order a cold chocolate drink (think drinking chocolate only cool) it was a high percentage of chocolate and hade spices such as cloves and nutmeg mixed in. I did get a taste of what she ordered and it was delicous.
I ordered what we had originaly been looking for gelato, the flavors to pick from were of course chocolate, but others were more ineresting like honey with rosemary and burnt sugar. I decided on two flavors Chocolate (of course!) and thia coconut. They were delicous! The chocolte was thick and creamy, rich and dark and was like eating chilled chocolate froasting. The thia coconut flavor was lighter and sweet. Paired together they were amazing.
Golosa is located at 806 south 6th street in Bella Vista. The menu is a bit pricey, but totally worth every penny! It's a chocolate lovers heaven.
